It’s been over 15 years since we have used traditional wheat flour in my home.

I’ve experimented with about every flour that exists. My go to for a long time was almond flour. Truth is that it is very difficult to work with.

The reality is that most of us have negative reactions to wheat because of what man has done to it. Turns out a genetically modified crop covered in harsh chemicals is bad for us…. we shouldn’t be surprised.

An einkorn flour is an ancient grain very different than traditional wheat. Most people do not react negatively to it…. this is the type of wheat our ancestors actually ate for thousands of years.

If you take this einkorn flour a step further and ferment it…. Turn it into sourdough… it makes incredibly high quality breads, pastries, pizza 🍕 or whatever else you may have in mind.
