The Best Keto Zucchini Bread Recipe [with Walnut Crust]
I normally don’t make many bread like desserts, but today was an exception. I happened to have a couple zucchini’s on hand, and I wanted to bake something for a dessert. Then it hit me – I haven’t made a zucchini bread in a long time! So here is a recipe for keto zucchini bread with walnuts.
Zucchini bread, to me, is more of a seasonal treat. My mom tends to make them more around the holidays. She prefers to make more of a sugary chocolate chip version than this one. But luckily, zucchini bread is just as easy to make keto and sugar-free. Just replace the sugar with erythritol and the flour with almond flour, and you have a keto friendly recipe.
For the crust, I decided I wanted to use up some of my walnuts. It adds a nice crunch to the bread, which is what I like. The balance of sweet and crunchy works well for me. If you want more a sweet and salty flavor, just toss some salt on the crust layer as well.
As for freezing, this bread does freeze well. Instead of slicing each piece up and freezing, I like to actually freeze the entire loaf. That’s only because each loaf tends to disappear quickly when family is around.

3 large eggs
½ cup olive oil
1 teaspoon vanilla extract
2 ½ cups almond flour
1 ½ cups erythritol
½ teaspoon salt
1 ½ teaspoons baking powder

Can you use coconut flour?

@@janettaylor2158 That could be a good option too. I remember her flour uses almond flour as well, though. Last I looked, it contained a lot of oat fiber which in larger quantities gives me bloating so I never really tried much with it. Hopefully the commenter has better luck than me!

I wonder if you could use this recipe in a mini muffin pan in an air fryer 2:17
I’m sure you could – at the end of the day an air fryer is just a convection oven. You could reduce the temp a little bit and cook for a bit less time since mini muffins will cook through quicker.
@@RuledMe you ought to do a series on air fryer baking. I have been watching your channel for a long time and I love your work. I do miss your presence in them though. I live full-time in an RV and it does not come with an oven so I rely on an air fryer
@@davidmblabla I have a few air fryer recipes, but basically any oven-based recipe can be converted to air fryer. It just comes down to reducing the temp by 25 degrees OR reducing cook time. If you’re reducing the amount of food that goes in there (or the container size, like using muffins) you’d need to do both.

Looks great & pretty easy. wonder if we could substitute the almond flour for a different flour. Not quite sure which one, just moving away from almonds and nuts in general, trying to reduce oxolates. Keto, Ketovore, Carnivore works for me, but I do find myself sensitive to the nuts. Anyone else?
Thanks! Oxalates shouldn’t really be a concern for you unless you either have kidney issues already (in which case keto might not be the best diet of choice) or you consume lots of nuts already. If you consume nuts occasionally, the health benefits of nuts far outweigh the affect oxalates would have.
You can use sunflower seed flour in the same 1:1 ratio as almond flour in any recipe, but it will slightly change the taste (and can sometimes turn green when baked).
Can you make this with a combination of almond and lupin flour?
I’m sure you could, but I don’t have much experience with lupin flour. From what I understand, you can replace 1/3 of the almond flour with lupin flour and get a good texture out of it.
