Today, we’re going to talk about a dangerous ingredient that’s worse than high-fructose corn syrup, sugar, starches, and seed oils! It’s a potent neurotoxin, damages reproductive organs, and is classified as a Class A carcinogen by the EPA.

You won’t find this dangerous ingredient on a food label because it’s a byproduct, not an ingredient used to make the food.

Acrylamide is created when you combine a specific protein with refined sugar such as glucose, dextrose, glucose syrup, or maltodextrin under high heat.

Saturated fats prevent the formation of acrylamide. If junk foods were made with saturated fat like tallow, this could significantly reduce cancer risk.

Here are some foods to avoid that contain acrylamide:
•Corn chips
•Potato chips
•French fries
•Baked goods
•Crackers
•Cookies
•Cereal
•Bread crust
•Roasted coffee

To avoid acrylamide, cook with tallow, coconut oil, or butter, and use natural sugar like honey or sugar cane. Slow cooking reduces the formation of acrylamide. Focus on consuming whole foods and avoid refined and processed foods.

If you eat junk food, pair it with something to counter the effects of acrylamide. Cruciferous vegetables contain protective compounds that protect against acrylamide. Garlic, sprouts, sauerkraut, citrus, bell peppers, green tea, and spirulina also have protective effects.

Organic dark-roasted or espresso coffee is heated to 400 degrees, destabilizing acrylamide. Light-roasted coffee has 10 times more acrylamide than dark-roasted coffee.

When the amino acid asparagine combines with refined sugar and is heated over 285 degrees Fahrenheit, a Maillard reaction produces the byproduct acrylamide.

Acrylamide creates another byproduct called glycinamide, which is more deadly than acrylamide! Cancer is the second leading cause of death, and acrylamide may dramatically increase cancer risk.

    it is a crying shame that we MUST be held accountable to stay alive and yet I see no other way to do it. Thank you Dr,. Berg. I thought I was eating healthy but Never heard of this and as much as I love my occassional potato chips, I will look at them differently from now on. You are the best of the best sir.

      That’s the frustrating thing in the US, even when info like this becomes known lobby groups (the food industry has one of the biggest) will cast doubt, and convince the government to look the other way. We have soo many additives and chemicals in our food system that are banned in other countries.

    Well done! I think what has saved me over decades is that fresh broccoli has always been my favorite go to vegetable 🙂 And since discovering Dr. Berg I’ve been eating 1/4 cup of homemade fermented sauerkraut as an appetizer with every meal. plus I gave up all fast food and processed foods 5 years ago.

      @@suetsnbjj2853 It’s so easy – just chop, salt, pound, add a bit of water in jar and let sit on the counter for a week or so. There are THOUSANDS of videos out there, some sharing slightly different techniques and flavors, make just like kimchi. Just search “how to make sauerkraut” 🙂

They all contribute significant knowledge, and I don’t find either of them to be more knowledgeable or more in alignment with human health than the other. I watch them as well as Dr.Eric who has been tremendously helpful to improving the health of myself and others. Everyone should be joining forces collectively against the evil out there seeking to destroy human health, not ever being divisive, competitive or making comparisons for even a moment. Even Dr. Ken Berry has said this on his channel.

    Happy New Year doc, and thanks for sharing your knowledge with us. I am following you for over two years, and I think this video is perfect for me to post this comment. I always had troubles with my weight. I weighed 310lbs nine months ago, and now I am at 210lbs. It was definitely a slow process, but I never felt hungry, and I wasn’t on restrictive diet. I just followed meal plan for weight loss I found at OnlyMeal, exercised 3 times per week at home, and I sleep at least 7 hours every night. Now I think that I am close to the best shape of my life. But my goal for 2025 is to achieve 180lbs and tone up my muscles.
