Can you store these in the refrigerator for a couple of days to have for a work lunch?
That should be fine – I’d keep the avocado separate if you’re going to do that, though.
Inspiring as always. The calorie count looks a little high. Did you use uncooked bacon nutrition? Or did the rendered bacon fat get added to the top too?
I add the fat in or make a vinaigrette with it. You’re welcome to leave it out and save it for something else (or use it to cook the eggs and mushrooms and leave out the butter).
