Coconut Caramel Chicken:
24 ounce bone-in, skin-on chicken drumsticks
1/2 cup allulose, or sweetener of your choice
1 tablespoon water
7 ounce canned coconut milk, ~1/2 can
1/2 cup chicken broth
1 1/2 tablespoon fish sauce, or soy sauce
2 1/2 tablespoon unseasoned rice vinegar
1/2 medium onion, finely chopped
1 teaspoon chili flakes
salt and pepper, to taste
Cauliflower Rice:
400 gram cauliflower rice
3 tablespoons coconut oil
3 teaspoon fresh garlic, minced
1/2 teaspoon chili flakes
1/4 cup cilantro, finely chopped
1/2 medium lime, juice and zest

Can you use chicken thighs?
Yes, that should be fine though I’d use bone-in. The caramel sauce can take a while to thicken and darken, so you want to make sure you have a cut of meat that doesn’t overcook easily. Anything with a bone should work quite well. Enjoy!

Yes, you could do that, too! Or cook the chicken separately and coat in the sauce after. Up to you, though I do think the flavor is better when cooked in the sauce.
