Keto Churro Mug Cake [90-second Dessert]

These churro mug cakes are pretty darn good. I was interested to see how they turned out – I adapted it from a churro cupcake recipe I saw on Food Network. They definitely stood up to the real thing, I’d imagine – and that sweet tooth…totally satisfied.

Fon’t get your hopes up on the texture of these resembling that of fried crispy dough. They’re not exactly going to bring nostalgic memories of the fair back to you, because you just can’t achieve that in the microwave. But the flavors? The flavors are there! They’re delicious, sweet, and a little spicy with a hint of cinnamon.

Ingredients:
1 large egg
2 tablespoons butter
4 tablespoons almond flour
1 tablespoon erythritol
7 drops liquid Stevia
½ teaspoon baking powder
¼ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon vanilla
1/8 teaspoon ginger
1/8 teaspoon allspice

Nutrition Summary: Per serving this is 447 Calories, 42.03g Fats, 4.77g Net Carbs, and 12.61g Protein. Of course, you could always split that in half if you can’t afford that many calories!

      That would be super decadent! Only problem is I’d have to share because it’d be too calorie dense for me for 1 serving 😥

    Does it taste eggy? Can i just use egg whites?

      Egg whites tend to add the eggy flavor compared to the yolk, just so you know. But no, it doesn’t taste very eggy (though it can if you overcook it – but the texture won’t be great if that happens). You need the yolk for the added fat to help add moisture into the cake.

    Can we use an air fryer or an oven, if you don’t want to use a microwave? Microwave is not good for our health!😕

      Microwaves are totally fine for your health – all of the “negative health effects” that were touted have been debunked over and over. If you do want to make it in an oven or air fryer, you can. 350F for 8-10 minutes in a regular oven, probably 325F in an air fryer.

      @caty9995  Yes…plus it destroys any nutritional value of the food/s! Just because they tell us it’s fine for us to use microwaves doesn’t mean it is ! 😕😪

      @Manuka Cooking food using any method will “destroy” nutritional value – nutrients break down when they are exposed to heat. Do you have any shred of scientific proof that microwaves are not healthy to use? All of the studies that were done on this topic show that microwaves are safe to use and in fact, some studies showed that microwaves were BETTER than traditional methods of cooking because the food is being cooked for less time, therefore less nutrients were broken down.

      If you are going to make such debunked claims, please share the peer-reviewed studies with us, because every single shred of scientific evidence shows that you are misinformed.
