    I feel like I’d add the walnuts even half way through setting so that they stay in/on the fudge.

      You can definitely do that, or even mix them into the fudge. It’s pretty soft so even if you top them after it sets, you can press the nuts in.

    What type of collagen should you use?

      It doesn’t particularly matter which brand you choose to use as long as it’s low-carb. I’ve used vital protein and perfect keto’s brand among others and they all work pretty similarly.

    What can I substitute for the collagen?

      You could probably use some protein powder (a little less than the collagen), but I haven’t tested with whey protein and collagen mixes a little differently into mixtures/liquids.

    SF chocolate chips should work okay instead of unsweetened baking chocolate but cut down on the sweetener in the recipe, correct?

      If they’re already sweetened, yes I would cut back on the sweetener some 😊

      Yes, or the freezer for 1-2 hours. At room temperature it’ll be very soft.

      No problem! Yeah I’d keep it in the fridge if you want that fudgy consistency. All of the ingredients that go into this are soft at room temp. It might hold its shape when at room temp, but it would be more like a thick pudding/custard at that point. Hope that helps clarify 😊 @Aileen 愛玲
