An amazing underrated snack, boiled peas, with salt and pepper. Maybe some lemon juice or feta if you’re feeling fancy. It’s like heaven.

I’m not vegan, but I do struggle with getting enough protein and I’ve been slowly moving towards a more plant based diet. My current favorite obsession is soy curls! They’re not 100% like chicken but they scratch the same itch and they’re shelf-stable and so, so easy to cook! Gathering recipes now because I’m planning on going vegan for Lent this year!
As a former vegan, don’t go vegan. Plant nutrients are more poorly absorbed. This is a major issue if you already struggle with eating enough protein. At least continue eating eggs. You can get a few backyard chickens or find a local farmer to ensure the chickens are treated well. Also, it’s a myth than chickens need to eat their unhatched eggs to stay healthy. Feed the shells back to them for calcium, give them kitchen scraps for other nutrients, and let them forage outside for bugs and stuff, and they’ll be fine.

@@msjkramey Not a dietitian, but if you’re trying to get more plant-based protein, it’s probably fairly easy to just include more of the high protein ingredients in your meals, between those featured in the video, alongside tofu, seitan, tvp, beans, and hemp hearts.
Might have better recommendations if i knew what your general diet and preferences actually looked like, but maybe this helps.

@DoesItMatterAtAll I’m just not getting it because I don’t really gravitate towards protein-rich foods and I’m in a calorie deficit (didn’t make that connection until she pointed it out). I just need to put a smidge more effort into it. When I’m exhausted at the end of a long day, I’ve just been gravitating towards low-protein convenience foods. That’s all it is
