Apple Pie Overnight Oats

Didn’t think I liked overnight oats until I started microwaving them!! Game changer in the morning ⭐️ The oats get softer and soak up more of the liquid. These Apple Pie Overnight Oats are my go-to recipe, but you can swap out the apples for any seasonal fruit all year round. Recipe below! APPLE PIE OVERNIGHT OATS 🍎½ cup old-fashioned rolled oats
3/4 tsp pumpkin pie spice
1 pinch salt
¾ cup plain unsweetened soy milk or other unsweetened non-dairy milk
1 tbsp maple syrup, plus more to taste
½ apple diced
2 dates pitted and diced
1 tbsp ground flaxseed, for serving
3 tbsp chopped walnuts or pecans, for serving
Add the oats, ½ tsp of the pumpkin pie spice, and salt to a jar and stir well. Then add the milk, half of the dates, and 2 teaspoons of the maple syrup. Gently stir to combine.
In a small bowl, combine the apples, remaining dates, remaining pumpkin pie spice, and remaining maple syrup. Stir well.
Transfer the seasoned apple mixture to the jar, topping the oats.
Cover the oats and chill them in the refrigerator overnight.
Before serving, warm in the microwave (if you want), and stir the ground flaxseed and chopped walnuts into the oats.
