    I am a sweet potato fanatic.. I was introduced to this recipes years ago. Easy Peazy.. Cut up 1 sweet potato into small squares and set aside, cut up 1/3 onion and toss in 2 Tablespoons of olive oil, toss until cooked. Set aside. Cook sweet potato in olive oil,around 2 Tablespoons of until browned and cooked, add cooked onions and salt and pepper to taste!
    DELICIOUS! and soooo easy.
    *Just 2 ingredients 1 sweet potato and one sweet or yellow onion. Yummy

    i have black salt! i’ve gotten it under the name kala namak. a little goes a long way but i love a good savory tofu scramble, and you can even wrap it up in a tortilla to make it quick and on the go if you wrap it up beforehand. nothing i love more than prepping things in advance so i can sleep more ( hey more sleep is healthy too lol) i also like mustard mixed with avocado on my toast. i love a good tang.

      @ i used to add just egg in the carton that i would microwave quickly as a quick add on for more protein but as that has reached a price i’m not comfortable paying as of late i use canned black beans now. just a quick rinse and boom black beans and a crack of some spices (i’m using ghost pepper in a grinder i got at trader joe’s which i believe was a limited thing last year) but i love the heat. cool avo, tangy mustard, rich beans and the spice bring it all together really well for me! on a good hearty bread and it really is a good carb protein fat combo 😋

    Well, these recipes are better than just grabbing a banana,as I head out the door. I’m a vegan newbie and still experimenting with recipes….. I’m learning.😂 I want to try ALL of those recipes., but the Tofu scramble will be first, I eat tofu often and I do miss scrambled eggs.

      Haha, banana on the way out the door is fine, but after you’ve eaten a good breakfast 😆 I love that scramble, and most of the recipes in this video especially because they can all be made in advance and reheated in the AM.     Tofu scramble is so underrated. I can see non-vegans wrinkling their nose at the thought because they never learned how to prepare tofu let alone scrambled tofu, but it’s not just delicious and healthy, but more so than eggs (and cheaper!). So many ways to prepare it too!

      As a non vegan some of us do watch haha im in the process of becoming vegan tried tofu for the first te the other day and was pleasantly surprised I don’t know how to scramble it thow only just learned how to press all the liquid out 😅🤣

    I love your approach (I like to eat 80-90% healthy but do use a little oil or vegan butter/mayo occasionally) and really love your new cookbook! I am going to try the buttermilk waffles soon!
